This weekend was lovely so I spent all of my time outside in the gardens. Summertime means grilling to me and I love the fresh flavors of vegetables and fruits cooked this way. Here are a couple of healthy skinny sexy grilling ideas to get your creative juices flowing!
The first photograph is of a piece of tuna and some veggie skewers that that I marinated in teriyaki , sesame, garlic , blueberry and habanero jam , tequila and lime! Place the skewers and the tuna on the grill and cook until its cooked just the way that you like it, basting continuously with the marinade.
Then there's the sweet corn, because as far as my whole entire family is concerned what's summer without corn on the cob! I love Mexican grilled sweet corn but it's really heavy on the calories. This is my vegan version and it's very easy and delicious! Just take an ear of sweet corn and lay it on a piece of foil. Rub with a teaspoon of vegannaise and dust with chili powder and a tablespoon of shredded vegan cheese. Wrap it in the foil and grill for 15 minutes, turning several times. Delicious!
Serve this meal with a fresh fruity Sangria and don't forget the wasabi mustard sauce for the tuna! Just take your favorite honey mustard and add a bit of seasoned rice vinegar and as much wasabi powder as you want to taste!
In this meal grilled pineapple is front and center along with an entire mess of grilled onions and mushrooms to create a vegan version of a Hawaiian flavored cheeseburger! Grill the slices of pineapple slowly, so that they caramelize, basting with a mixture of Teriyaki and a bit of mango juice and chinese 5 spice powder. Use the same marinade on the mushrooms and onions and baste the veggie burgers (whichever one you like!)with it as well. Assemble the burger on lettuce leaves if you don't want a bun, top with a slice or two of vegan american cheese, a pineapple slice and lots of the mushrooms and onions! This is messy and delicious and absolutely wonderful when served with a wonderful summertime ale like a Leininkugels Summer Shandy...my new favorite porch rocker beverage!
Then after dinner ...why not kick back , toss off your shoes , dance a bit and create a little magic of your own!!
