So, I have this fabulous neighbor Lainie, who is taking Yoga teacher training! Every tuesday night I go over to her house where she and several other teacher trainee's (is there such a word?) meet and we practice their homework which is an absolute blast! We always have healthy appetizers yummy wine and some pretty incredible conversation.

Last week I was in the mood for something light, so I brought this plate of luscious, California strawberries (they were huge, sweet and perfect!) and a fruit dip. You can buy this premade but why bother when it's so easy to make. Just mix a cup of vanilla yogurt, 1/2 a cup of mascarpone, several tablespoons of cream or half and half , 1 tablespoon of cinnamon, 1/2 a teaspoon of vanilla extract and honey to taste. That's it! Simple and delicious!

Skinny Sexy Slow Food: Maple , Caramel Pumpkin Pie

This is a homemade Maple, Caramel, Pumpkin pie with a spelt crust. It was delicious, a bit like pumpkin candy or as my friend Bethane said, a pumpkin praline. It was an accident, I was going to Dr. up some pie filling but when I got to Whole Foods all that was left was organic pumpkin. So I quickly went through the recipe  file in my brain and remembered that I needed eggs and a can of sweetened condensed milk. The resulting pie was amazing....subtly sweet, deliciously spicy and a bit chewy in a most excellent way. 

The recipe is simple.Preheat the oven to 425 . You'll need one pint size box or can of unseasoned pumpkin, One can of sweetened condensed milk, 2 organic eggs, 1/3 of a cup of dark maple syrup , at least two tablespoons of mixed pie spice (heavy on the cinnamon!) , several teaspoons of bourbon and 1/3 of a cup of high quality caramel. Mix it all together in a kitchen aid or other mixer until it is a batter and then add 4 dashes of organic liquid smoke ...Yes you heard me right!

Pour it all into a 9 inch pie crust....I used a premade spelt crust that I got at Whole Foods and it was yummy! Then bake it for 10 minutes at 425, reduce the heat to 350 and continue to bake for 50 more minutes or until done. Take a broom straw and insert it into the center to test for doneness. If the straw comes out clean you're ready to go. Next time I'm going to melt some butter , sugar and pecans together and make a caramel for the bottom of the pie which I think will be amazing.  We served it warm with vanilla ice cream and a some Rusty Nails...that decadent combination of single malt scotch and drambuie. A good ale would have worked as well! One sliver of this one goes along way, but it's the perfect Autumn dessert and well worth the splurge.

I love Ice cream...who doesn't really? There's actually no lovelier treat on a hot summer's day than a huge bowl of homemade ice cream, but if you're anything like me, the cream will get you a stomachache everytime. So tonight when my poor husband needed something cool and silky to soothe his canker sores  instead of rushing to give him the Ben and Jerry's I decided to make him a homemade treat. If you've got a Cuisinart Frozen Yogurt maker this sort of thing is a snap! Just keep the cannister in the freezer at all times and you're ready to go. If you don't have an ice cream maker you can freeze this mixture in a deep pan and scrape it to serve , but it will be more like granita than ice cream because it's not a true custard.

For this healthy lovely skinny sexy treat I just took 2 ripe bananas and put them into my vitamix with about 3 cups of almond coconut milk. I added agave nectar to taste,a teaspoon of peach bitters, a teaspoon of vanilla and a teaspoon of Penzeys cake spice. Then I blended the whole thing until it was creamy. I poured it into my ice cream maker and switched it on. Within minutes it was beginning to freeze so I added 1 cup of raspberries and two tablespoons of fig jam. It swirled and swirled until the whole thing was frozen to the consistency of soft serve ice cream and then I gave him a bowl. Bye Bye pain...Huge grin...Happy husband. Nice and Vegan for me!

Tomorrows flavor? Lavender Chevre! Day after that? Homemade mint chocolate chip using an infusion of my homegrown chocolate mint...The possibilities are endless!
