I made this for my husband, the self professed cereal addict who loves to start breakfast with something easy. About 2 months ago we discovered through a process of food elimination that what he really needed was a protein rich breakfast, because the carbs from the cereal that he was eating had him crashing and burning at about 11:00 am.
I came across this recipe in a cookbook by Andrew Weil and decided to try to make it my own. It was so easy -the hardest part was cooking the quinoa. Just prepare a cup of red quinoa according to the instructions on the bag and let it cool. I added a bag of organic frozen mixed berries (Strawberries, blueberries, blackberries) , half a bag of trail mix (almonds, pecans, pumpkin seed, sunflower seeds, raisins and spricots). a cup of torn basil, a cup of torn flat leaf parsley, honey to taste, 1/2 cup of extra virgin olive oil and a teaspoon of cinnamon. Stir gently and refrigerate overnight. Serve with a dollop of Greek Yogurt and a drizzle of honey.
This recipe can really be modified any way that you want and with any fruit that you'd like. Enjoy!
